The other day when I shared my recipe for my Tex Mex Artichoke Chicken, within the post I wanted to link to my guacamole recipe, but I realized I never shared it. I mean, years ago I did share my guacamole recipe stretched with eggs, but since I don't eat eggs anymore, and especially because I've been able to get avocado relatively cheaply lately, I don't make it anything like this anymore, which is a good thing, because my kids don't like it that way and complain when they go to my mother that does make it that way.
I feel like its really hard to go wrong with guacamole. As long as you add lemon juice and salt you'll get something tasty, but this is my favorite way to make guacamole, making it perfection.
If you're a cilantro hater, definitely leave it out. This will still be great. And if you like spice, feel free to add a chili pepper to your guacamole. (I like spice but prefer mine in my salsa and not in the guac.) And you can also add a diced tomato to stretch your guacamole a bit.
As for how to eat your guacamole? How not! Eat it in tacos, burritos, on chili, on nachos, with chips, with crackers, as a dip for veggies, on sandwiches, or just even eat it by the spoonful.
Bonus? Guacamole freezes beautifully!
Easy Guacamole Recipe -- Paleo, Vegan, and Delicious
Ingredients:2 avocados
2 tablespoons lemon juice or lime juice
1/2 teaspoon granulated garlic
1/2-1 teaspoon salt
2-3 tablespoons chopped fresh cilantro (optional)
1/2 teaspoon cumin
Instructions:
1. Peel and mash your avocado with a fork or a potato masher. Of course you can use a food processor but I prefer mine chunkier.
2. Add the rest of the ingredients and mix well, adjusting them to taste.
