This recipe wins absolutely no prizes for beauty, but it is deserving of nearly every other prize.
This morning I was heading out to a get together with friends, where coffee and cake are usually served, and since I don't eat gluten (or drink coffee) I usually eat nothing or try to bring along my own thing. After sending my kids off to school this morning, I had a little extra time so decided to make myself something gluten free, egg free, and dairy free to bring along. I have a recipe for such a chocolate cake in a mug (that I haven't shared yet, since I'm still tweaking it) but I couldn't find my cocoa powder, so decided to go with spice cake instead.
Basically, if you like spice cake, try this one out. It's worth it! And takes less than 10 minutes from when you even had the idea to be able to eat this.
Easy and Delicious Spice Cake in a Mug Recipe -- Gluten Free and Vegan Options, Allergy Friendly
Ingredients:4 tablespoons rice flour AND 2 tablespoons corn, potato, or tapioca starch AND 1/4 teaspoon xanthan gum OR 6 tablespoons gluten free all purpose flour mix or 4 tablespoons gluten/wheat flour
1 tablespoon ground flax seeds
2 tablespoons oil of choice
4 tablespoons water
Scant 1/4 cup honey, maple syrup, jaggery syrup, etc...
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon dried or fresh minced/grated ginger
1 pinch salt
1/4 teaspoon baking powder
Instructions:
1. Mix all the ingredients together in a mug, making sure there's no clumps. I recommend first adding the dry stuff and then the oil and then the sweetener because then you can use the same measuring cup/spoon for everything, and the oil helps the sticky sweetener slip out.
2. Microwave for 4 minutes if making it gluten free or 3 minutes if making it with gluten.
3. Eat it with a spoon straight from the cup. Top it with a scoop of ice cream if you want, to make it even more perfect.
