I wrote in my recent post that I really, really, really love mangos. I don't think I ever tasted something with mango I didn't like. When my sister Violet was younger, she hated mangoes, and I never understood it, didn't understand what there was to even dislike about this luscious fruit. She eventually "came to her senses" and started liking mangoes. My kids all love mango and fight over it when I get it... or so I thought. My daughter Anneleise just told me this past week that she doesn't mind a little mango, but she doesn't particularly enjoy it. Heresy.
Anyhow, as I mentioned in that post, when I saw mangos in the store at a low price because they were in season, I knew I wanted to make myself some mango salsa to have with chicken. So I made this mango salsa recipe and served it with this delicious pineapple cilantro chicken. Which I then made again and again, with this salsa, over the course of 3 weeks.
But even more than I love that chicken, I am absolutely obsessed with this mango salsa. It's sweet, spicy, and tangy, has the perfect blend of textures and flavors, with all the scrumptious taste of summer, and is terrific on everything. Or if you're like me, even eaten by the spoonful. I make a big batch and it lasts in the fridge- the picture below was when I finally got around to taking a picture of it with chicken 4 days after making the salsa. It gets a little softer after a few days, so it is less photogenic (which is why I made yet another batch to photograph for this post- see above) but the flavors meld together better the longer it sits so it is phenomenal also as leftovers.
Eat it as a condiment on rice or pasta, in a tortilla with tacos, with rice and beans, on chicken, add it to lettuce to make a terrific salad... the sky's the limit. (I plan on having mine with beef steak tonight.)
And of course, it is completely allergy friendly too. Gluten free, dairy free, vegan, paleo friendly, and you can mix it up in just a few minutes.
Fresh and Easy Mango Salsa Recipe -- Gluten Free, Paleo, Allergy Friendly, and Frugal
Ingredients:5 mangos
2 medium onion
2 red peppers
1 hot pepper (or to taste)
2-3 cloves garlic
1/4-1/3 cup lemon juice
1/4 cup oil (try using something with a very mild flavor, I used canola but depending on your dietary needs change this up
1/2-1 teaspoon salt
