Ok, I take that back.
In theory I love apple pie, but I don't like pie crust. I don't really care what it is made from, the pie crust basically just holds the food together, and then I tolerate it to be able to eat the rest of the pie.
Add to it that pie crusts, especially when gluten free, are just a lot of work to make.
So this recipe has got the perks of apple pie, the taste, the filling, the apples... but none of that icky crust.
And of course it's super easy to make, gluten free, paleo, and allergy friendly.
Feel free to top it with a giant scoop of vanilla ice cream. I feel it's begging for that. (Alas I have none at home!!!)
It's also the perfect thing to do with your yucky looking apples.
See these apples that I had sitting in my fridge or that I lugged around with me on vacation and were all bruised and unappetizing looking? Well here I made it into a tempting dish.

Cheater Spiced Apple Pie Recipe- Gluten Free, Paleo, Vegan, and Easy
Ingredients:16 apples, sliced
1/2 teaspoon fresh ginger, grated
1/2 teaspoon nutmeg
4 teaspoons cinnamon
4 tablespoons potato, tapioca, or corn starch
1/2 cup honey or 3/4 cups maple syrup
Instructions:
1. Core and slice your apples. I used a mandolin, as it saved me time and gave me uniform slices.
2. Add the rest of the ingredients. Mix well.
3. Place in a 9x9 baking pan.
4. Cover and bake at 350 for 45 minutes.
5. Uncover and bake for 15 minutes more.
Eat cold or hot.

Now that's a great idea. I like crust personally but this does cut down on calories. What about adding a crumb topping? That's easier and tastier than a pie crust on top so that's always my go to. Now you've made me want apple pie!
