Hi there everyone! Good thing I make sure to share my weekly frugal accomplishments on Mondays every week, because it pushes me to blog even when I’ve been being lazy. Sorry for the lack of blog posts this past week- I’ll try to get back on the bandwagon…

Here’s what we did to save money this past week:

Sunday

Made homemade pancakes.

Went shopping, stocked up on a lot of sale items, some at half the cost they typically go for.
Got a bunch of hand me down clothes for girls.
Stretched chicken breast by making it into fried rice.
Monday
Used not so great gluten free pasta (its cheap, but the texture is a little funny) to make minestrone soup.
Made homemade kimchi.
Made homemade pancakes.
Butchered some whole chickens.
Made homemade pickled onions.
Rendered chicken fat, served cracklings as a snack
Built some stuff out of some wood we had at home.

Tuesday
Made zoodles (zucchini “noodles”)
I’m cooking a fancy meal for a large crowd and I wanted to keep costs low, so spent a lot of time cooking up cheap dishes that’ll combine to form a fancy meal.
Took the kids to a free show in a nearby city.
Bought the boys nice shirts on sale, as well as cheaply priced tights for Anneliese.

Wednesday
Made homemade jello
Made 2 batches of gluten free apple muffins, including an egg free refined sugar free version.

Thursday
Served bibimbap for a fancy meal for a crowd- with lots of cheap side dishes, so it stretched the meat without looking skimpy.
Took home leftovers and froze them for a later date.

Friday
Took leftover ground beef and leftover rice, and stuffed it into some giant zucchinis to make stuffed zucchini
Made chicken carcass soup, picked the chicken off the bones to have them for another dish.
Had guests and served some leftovers among other stuff.
Made homemade gluten free tahini chocolate chip cookies.
Made a wild flower bouquet.
Made gluten free vegan spice cake.

Saturday
Made homemade mock Lipton iced tea.
Had guests and served leftovers from Thursday for some of the dishes.
