I was making this salad today, and as I was making it, I thought that I should post the recipe, and then I said no, I am sure this recipe is already here because I make it so often, there’s no way that this recipe isn’t on my blog already. But a search through my archives shows otherwise, so I guess I never did.

This recipe is perfect for anyone who doesn’t hate fennel. It has the right amount of crunch, sweet, sour, and complexity of flavor. You can make it without the orange but it simply isn’t as good that way.

Fennel Salad with Mint and Oranges Recipe — Gluten Free, Paleo, Vegan, and Easy


Ingredients

1 large fennel bulb

1/4 cup lemon juice

1/4 cup oil

1/2-1 teaspoon salt

Approximately 20 mint leaves or 1 overflowing tablespoon of packed mint leaves
1 orange, tangerine, or clementine


Instructions

1. Wash and chop your fennel into thin pieces, including part of the stalk.

2. Peel your orange and chop it up into small pieces, making sure to remove all the seeds.
3. Chop up your mint leaves.
4. Add all the ingredients together, adjusting salt as desired.
Enjoy!
While this salad is wonderful fresh it is also great the next day.
