I have my 12 year old daughter, Rose, to thank for this recipe. She found a recipe like it on Youtube shorts, and then we played around with it, and she made it so many times in a row, eating it for many meals and taking it for lunches to school. It is quite delicious. It is similar to tzatziki, the Greek cucumber yogurt dip, except that is much more yogurt heavy, and this is more cucumber heavy and more of a salad than a condiment. Either way, it is very delicious and I highly recommend it. It is quite easy to make, and it is frugal as well.
Ingredients
- 6 medium sized cucumbers, sliced or diced
- 2 containers (130 grams each) Greek yogurt or 1 cup strained yogurt (use homemade yogurt to keep this as cheap as possible)
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 1/2 teaspoons dry dill or equivalent amount fresh
- 1/2 teaspoon chili flakes
- 1/2 to 1 teaspoon salt, to taste
Instructions
- Wash and slice or dice the cucumbers and place them in a large bowl.
- Add the rest of the ingredients and mix well.
- Adjust the salt as needed.
- Eat right away or chill before serving.
- Enjoy!
