I have my friend Felicity to thank for this.
Not long ago, I was at Felicity’s house, and she made this delicious looking dessert. I asked her what it was and she told me that it was s’mores brownies, graham cracker crust on the bottom, brownies in the middle, and marshmallows on the top. She apologized that it was gluten and I couldn’t eat it, but that was totally fine with me, because I knew I’d be recreating this at home.
And I did. With guests. And it sorta flopped, because I was converting graham cracker pie crust recipes and brownies recipes, both made with butter, into oil, so it was very oily, and I overcooked it and burnt the marshmallows but even though I thought I flopped it, my kids and my guests devoured it and loved it and said that they didn’t think it was a flop and told me I have to make it again.
So I played around with it a lot, trying to get it just right. Lots and lots of batches of brownies and I ended up with these amazing brownies, and then put it all together again.
To be honest, I can’t think of enough good words to describe this dessert. Heavenly, decadent, indulgent, delicious, rich, and absolutely hitting the spot. My guests and kids devoured it leaving very little for me.
It’s probably my favorite dessert ever.
Oh, and did I forget to mention, its gluten free and vegan, and allergy friendly? Well, to be frank, how allergy friendly or vegan it is depends on the brand of marshmallows you use, but you just find what works for you and it’ll be amazing.
Heavenly Gluten Free Vegan Ooey Gooey S’mores Brownie Pie Recipe, Decadent, Fudgy, and Delicious Lava Cake
Ingredients:
1 gluten free graham cracker or mock graham cracker pie crust recipe that fits a 9×13 pan, or two in smaller pans
pie crust
1 gluten free vegan brownie recipe (if you’re using this recipe, use only half in this- either half the recipe, or make the whole thing and bake the other half like usual)
1-2 packages of marshmallows (use vegan marshmallows if you want to keep this vegan)
Instructions:
1. Make your graham cracker pie crust recipe and press into your pan or pans.
2. Make your brownie batter and pour it into your pie crusts, 1-3 cm deep, depending on how gooey you want this.
3. Bake for 16-20 minutes at 350 degrees, depending on how deep your brownie batter is, and how gooey or not you want it. Make sure its nearly all the way solid.
4. Cover your brownies with marshmallows, and return to the oven for 2-4 minutes, depending on how browned you want the marshmallows.
5. Enjoy hot or cold!
