This week’s menu

I’ve fallen out of habit of posting my shopping list and menu. For now, here’s my weekly menu, so you can get an idea of how I feed my family cheaply and deliciously.

Sunday: Tuna General Tso lo mein
Monday: Rice with Syrian style lentils and cabbage salad
Tuesday: Leftover lo mein, lentils, rice, and salad
Wednesday: Pasta, ratatouille and cheese
Thursday: Unstuffed cabbage with seitan mince.
Friday: Gezpacho, roasted eggplant salad, fenugreek dip, soy cabbage salad, sauerkraut, beet salad, oat rolled tuna balls, mustardy chicken salad, potato salad
Saturday: Friday leftovers.
