I had a bunch of black beans in my house to use up. I cooked a bunch to use to make black bean cake for my children's birthday party, and then I used some of the leftovers to make burritos, but I had still some more beans that needed to be used up, and I wanted something decidedly un-Mexican because I was getting bored and needed some variety.
Here's a recipe I made with my black beans; it's absolutely delicious!
Originally the recipe called for making it with ground beef, but black beans worked so well in it that I don't think I'd ever make it with ground beef. I do plan on trying it with other beans, chickpeas, and lentils, and I'm sure they'd all taste terrific in this recipe.
I based this recipe on the Pakistani Kima recipe from Whole New Mom's website.
3-4 tablespoons healthy oil
2 large onions, chopped
2 cloves garlic, minced
2-3 cups cooked black beans
3 tablespoons curry powder
3-4 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon turmeric
4-5 large tomatoes, chopped
4-5 medium potatoes, chopped really small
2 1/2-3 cups peas
1 cup water
Instructions:
1. Chop onions, mince garlic. Saute until golden.
2. Add spices and cook for 2 minutes.
3. Add beans and cook for 2 minutes.
4. Add the rest of the ingredients, and cook on medium heat, covered, stirring occasionally.
5. When the potatoes are soft, serve. This tastes terrific with rice.

I use this recipe so much that I probably should mix up a spice mix for it. It's amazing and my family loves it - the only complaint is that my skillet can't make enough for leftovers, which everyone wants for the next day! Love so many of your recipes. Thanks so much!
