I got a bunch of free carrots that were oddly shaped, and I wanted to figure out something tasty to do with them. I also needed to make a dessert. I first thought of carrot cake, but then I wanted cookies. Then it hit me, why not carrot cake cookies? Does such a thing even exist? I googled it and came up with a bunch of recipes, but they all had oats in them which I don’t eat, or lots of nuts, which I didn’t want to use for a variety of reasons. So I decided to come up with a recipe entirely on my own, and this was the result.
They were awesome.
Even my kid who said “Yuck, carrots in cookies? Gross!” ended up enjoying them. And my kid who said he doesn’t like cookies because of their texture also enjoyed these, because their texture isn’t the typical cookie texture. The outside is a bit crunchy, but the inside is soft like cake.
They taste phenomenal, and were easy to make, and cheap as well. While mine are gluten free and vegan, feel free to play around with this and use wheat flour instead of the gluten free flour mix, and use 2 eggs instead of the ground flax seed and water.
I used the small holes on my grater for this. If you want to use the large hole, it probably should be fine, but I can’t guarantee results.
Easy Gluten Free Vegan Carrot Cake Cookies Recipe, Allergy Friendly and Cheap
Ingredients:
2 cups grated carrots
3 2/3 cup gluten free all purpose flour mix (containing xanthan gum)
2 cups sugar
1/3 cup oil of choice
2 tablespoons ground flax seed
6 tablespoons water
1 1/2 teaspoon baking powder
1 1/2 teaspoon cinnamon
1/2 teaspoon salt
Instructions:
1. Grate your carrots using the smallest edge on a box grater.
2. Mix all the ingredients together.
3. Place spoonfuls of dough down on a lined baking tray. This made about 1 1/2 trays worth of cookies.
4. Bake at 350 degrees for 30 minutes.
5. Let cool before removing from the tray.
