7 Banana Banana Bread Recipe — Gluten Free and Refined Sugar Free

Sometimes we go through bananas really quickly in my house, and sometimes they get forgotten and so I end up with 7 bananas overripe at one time. Banana bread is the perfect thing to make with overripe bananas, but most banana bread recipes just call for 2 or maximum 3 overripe bananas; this recipe is for when you have a whole banana graveyard in your house.

The first time I made this recipe I cooked it too long and it ended up dry, but the next time I ended up with 7 overripe bananas and I made it again, I cooked it for half the time and it ended up perfectly textured, moist and delicious.

This recipe is gluten free, refined sugar free, and easy to make, and I highly recommend it if you ever end up with too many overripe bananas in your house.

Ingredients

  • 7 overripe bananas, the more overripe the better
  • 3/4 cup mildly flavored oil of choice
  • 3/4 cup date syrup (probably would work well with any other liquid sugars like honey, jaggery syrup or maple syrup but only tried it with date syrup)
  • 2 eggs
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cup rice flour
  • 1 1/2 cup potato starch
  • 2 teaspoons xanthan gum

Instructions

  1. Mash your bananas until as smooth as possible.
  2. Add the oil, date syrup and eggs and mix well.
  3. Add the rest of the ingredients and mix well until there are no clumps.
  4. Pour into a 9×13 pan.
  5. Bake at 350 for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  6. Enjoy!
